Coco-Matcha Chia Pudding

You are what you eat (and other things, obviously).

Seriously guys, it’s soooo important and yet most people don’t really pay attention to what they put in their mouths. I can say this, because I’ve been there, those disastrous moments where you eat anything that crosses your sight or just choose to eat junk all day long. And by junk I don’t only mean burgers and fries, there is an endless list of processed and “wannabe” foods that surround us. I call this foods empty calories, because they don’t bring anything more to the table but CALORIES! Don’t get me wrong, calories are essential, we need them to survive, but we need NUTRIENTS to strive and succeed. The body cannot work only with calories, it needs vitamins, minerals, rich carbohydrates, proteins, lipids (especially the good ones), etcetera, etcetera…

So, lately I’ve been thinking about how I can get the word out. Well, of course blogging, but I want to show different foods and recipes that provide an array of nutrients. I call this ones SUPERFOODS. But you don’t need to have ONLY superfoods. The secret is diversity and everything in moderation, including moderation (the candy bar you love the most, sporadically).

Today I made a great breakfast, dessert or snack recipe that may look a little weird (mainly due to the green color) but trust me it tastes gooood…

The superfoods I used are: Chia seeds, premium matcha powder, wheat grass powder and organic coconut milk (pressed)

Lets get to the facts:

Chia Seeds

  • Excellent source of healthy essential fatty acids – containing eight times more omega-3 fatty acids than salmon
  • One of the most digestible plant proteins
  • Excellent source of dietary fiber
  • Slows the digestion of carbs, which in turn keeps blood glucose quite in balance
  • They help the body to maintain a hydrated state for hours on end
  • Rich in calcium and contain iron
  • Chia seeds absorb up to 12 times their weight and expand in your stomach, making you feel full and curbing your appetite
  • Can improve blood pressure and increase healthy cholesterol while lowering bad cholesterol
  • Good source of phosphorous, which is needed to synthesize protein and repair cells and tissues, healing your body
  • The amino acid Tryptophan helps regulate appetite, sleep and improve mood
  • Full of antioxidants and much more!

Premium Matcha Powder

  • One cup of matcha tea has 10x the antioxidants of green or black tea, and gram for gram, matcha has 10-20x the antioxidant power of blueberries, acai or pomegranates
  • Contains beta carotene, l-theanine (an amino acid that reduces stress and anxiety and heightens mental clarity), and catechins (for beautiful skin)
  • Because matcha is actually ground up whole leaves, you get dietary fiber and chlorophyll which does not come out in brewed teas
  • Contains theanine which helps promote a calm and focused mind and lessens the caffeine spike so you get a more sustained energy boost

Wheatgrass Powder

Coco-Matcha Chia Pudding (super easy!)

(1 serving)

Ingredients

  • 1 banana, sliced
  • 60 ml organic coconut milk (I used pressed and canned)
  • 1 tbsp chia seeds
  • 1/2 tsp premium matcha powder (make sure to get the highest quality as possible)
  • 5 drops of natural vanilla extract (optional)
  • 1/8 tsp wheatgrass powder

Method

  1. Mix the coconut milk with the chia seeds and stir for some minutes. Let sit for 1 hour.
  2. Pour in a food processor all the ingredients and process until smooth.
